I also build a supporting frame for undermount sinks. The last 3 stone companies that i have used over the years said this was the way they wanted it done......no matter whether the sink was s/steel, composite or ceramic.
If the frame is built in such a way to enable the sink to be removed in the future, and the frame can be dropped out of the way, I don't see a problem with it. I know stone companies don't like drilling fixing holes in Quartz & Granite.
Having said that, a lot of the modern adhesives that are used nowadays are brilliant. As long as the surfaces to be bonded are prepared in the right way and the correct adhesive used for the appropriate application. The example that springs to my mind is when the Hob retaining clips/strips need to be fixed to the Hob cut out sides. I use a tube of adhesive recommend by my stone company and it is fantastic stuff......you have to leave the adhesive to set over night before fitting the Hob, but once set, the clips are virtually impossible to remove.
