if you are on a stud wall and don't have plaster board fixings, and the stud is 100mm away from the side panel. then fix your bracket where the stud is, job done.
as for the setting off the wall, it helps if the granite is wider 620 + for the sink and hob cut outs.

On the width thing - my little plug is designed to cover various depth service spaces, so you'd get the required expansion on any of the units where the cross-brace is around 40mm.
